GF Chocolate Chip Honey Cookies
These chocolate chip honey cookies are oh so ooey and gooey! Paired with a cup of raw milk and I promise you I could eat the whole batch!! Thankfully, though, my family swoops in and saves the day by doing exactly that before I finish two…oh the joys of having a family that loves the same food as you.
Recipe:
1/2 cup salted butter
1/4 cup & 2 Tbsp honey (3/4 cup if you double it like I do)
1/2 cup brown sugar
1 tsp vanilla extract
1 large egg
1 1/2 cups gluten free all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup chocolate chips
Cream honey, sugar, and butter with a stand mixer. Now this is where i should tell you to dirty another bow and mix all of your dry ingredients before mixing with your wet, but if you are like me and hate dishes i throw everything into my mixer.
Once your dry ingredients are mixed with the wet add in your chocolate chips and fold in with a spatula.
Cover your bowl with plastic or a cloth cover and throw into the fridge for 30 minutes.
Preheat your oven to 350 degrees and pull your cookie dough out of the fridge. You can use a scoop to place on your cookie sheet but i prefer to get my hands dirty and make perfect little balls of dough because it makes perfectly round cookies!
Throw those bad boys into the oven and cook for 8-10 minutes or until lightly brown on top. Remember your cookies continue to brown a bit more when you pull them out. Let the cookies sit till cool to the touch before moving to a different platter. Gluten free tends to fall apart easier and by allowing them to cool the chances go down.
Now pour yourself a tall glass of cold delicious raw milk (or store bought) and dig into your new favorite cookie!
